
Ingredients
- 1 medium avocado sliced
- 1/4 cucumber, deseeded and diced
- 1 heaped tsp, fresh chopped mint
- 1 tbsp chopped fresh coriander
- 2 spring onions, finely sliced
- Approx 350g diced watermelon
- 1tbsp finely chopped roasted peanuts
- 200g cooked prawns ( or can omit for a veggie option)
- For the dressing:
- 1 tsp honey
- Zest and juice of 1 lime
- 1tbsp fish sauce
- 1 tsp sesame oil
- 1 tsp garlic granules
- 1/2 tsp chilli paste
Instructions
- In a small bowl, whisk together the honey, lime juice, zest, fish sauce, sesame oil, garlic granules and chilli paste to make the dressing. It should be sweet, salty and sour.
- Add the mint, coriander and spring onions.
- In a large mixing bowl gently combine the avocado, cucumber, diced watermelon and prawns.
- Pour over the dress and toss slightly to coat.
- Finish with chopped peanuts and scatter over the top. Serve immediately or let it chill for 10 minutes to lets the flavours come together.
